Albuquerque Chili
Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 can (28 oz) fire-roasted tomatoes
- 2 cups green chili peppers, chopped (Costco Green Chilis Jar recommended)
- 3 cups smoked or pulled pork (Costco Smoked Pork recommended)
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until tender and translucent, about 5 minutes.
- Add the minced garlic and cumin, and continue to sauté for another 3 minutes until fragrant.
- Stir in the fire-roasted tomatoes and green chili peppers. Bring to a simmer and cook for 20 minutes, allowing the flavors to meld.
- Add the smoked pork to the pot, reduce the heat, and simmer for an additional 20-40 minutes, stirring occasionally.
- Season with salt and pepper to taste before serving.
Notes
- For a smoky flavor, use high-quality hickory smoked pulled pork.
- Adjust the heat by adding more or fewer green chili peppers based on your preference.
