Albuquerque Chili

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 can (28 oz) fire-roasted tomatoes
  • 2 cups green chili peppers, chopped (Costco Green Chilis Jar recommended)
  • 3 cups smoked or pulled pork (Costco Smoked Pork recommended)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until tender and translucent, about 5 minutes.
  2. Add the minced garlic and cumin, and continue to sauté for another 3 minutes until fragrant.
  3. Stir in the fire-roasted tomatoes and green chili peppers. Bring to a simmer and cook for 20 minutes, allowing the flavors to meld.
  4. Add the smoked pork to the pot, reduce the heat, and simmer for an additional 20-40 minutes, stirring occasionally.
  5. Season with salt and pepper to taste before serving.

Notes

  • For a smoky flavor, use high-quality hickory smoked pulled pork.
  • Adjust the heat by adding more or fewer green chili peppers based on your preference.
